Alce Nero artichokes in oil are grown in Puglia and only harvested when they have reached the right degree of ripeness. After the harvest, the artichokes are cleaned and carefully inspected to select the most tender and tasty hearts. The pasteurization and filling takes place at low temperatures so as not to change the properties of the ingredients.
