NATURATA olive oil from Crete PDO bears the quality label "extra virgin" and guarantees the highest quality based on various characteristics. Only mechanical processes are used to produce oil. The acid number must be a maximum of 0.8 g per 100 g of oil, the peroxide number a maximum of 20. In addition, there must be no sensory errors. The acid number indicates the proportion of free fatty acids, calculated as oleic acid. The longer an olive is stored in the oil mill between the ideal state of ripeness and processing, the more the proportion of free fatty acids increases. The lower the proportion of free fatty acids, the better the quality of the oil. A low peroxide value also indicates that the olives are processed quickly and that the oil is fresh.
